Iactually don't mind the "linear" focus of the missions in Brotherhood. Each assassination felt unique, compared to AC1 where pretty much every target boiled down to watching them make a speech in front of a crowd followed by trying your hardest not to get spotted only to find yourself fighting waves of guards and jumping into the nearest hay bale.

The three targets in Bonfire of Vanities where you should not be detected (the doctor, the captain guarding crops and the merchant in the ship) Micheletto Corella (Was not an assassination, but it was a great mission) Unity and Syndicate had best hands down.

A couple of missions are only accessible from the pigeon coop on the rooftop of Ezio's hideout. I don't remember there being an icon for it on the map, but check there, and that might unlock a couple.
